Just Beet it!

Ready for some delicious vegetarian burritos?  These are pretty easy, loaded with nutritional stuff, and did I mention they taste great.  Here’s what you need:

  • Whole wheat tortillas
  • 1 avocado, peeled and sliced
  • a couple slices of onion, chopped
  • 3 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 1/2 small heirloom tomatoes, chopped
  • 2 beets, washed and grated
  • 4 beet greens, washed and sliced
  • black pepper
  • taco seasoning
  1. Make the guacamole first, mash the avocado and add the onion and some seasoning — I used Everglades Heat, a seasoning blend made here in Florida that contains salt, pepper, and dehydrated onion and garlic
  2. Set that aside (disclaimer- I used way to much seasoning on the Guac, because I accidentally opened the wrong side of the container…oops)
  3. Put black beans in a small pot on medium low and add a little water so they won’t burn
  4. Stir beans occasionally and once they are soft mash with a fork and add some taco seasoning, pepper, and garlic
  5. While beans are cooking put some olive oil in a pan and add the beets, saute for a few minutes
  6. add beet greens, garlic, taco seasoning and pepper to the beets and saute for a few more minutes until greens are wilted
  7. Turn oven on to 350, and put tortilla in the oven for a couple minutes on each side
  8. Time to build your burrito: first put some black beans, guacamole, beet mixture and top with tomato

This recipe made two burritos with some black beans and guacamole and a few pieces of tomato left over….which I later mixed together and spread on a tortilla for a snack.
