Veggie Fried Rice

I’ve only made fried rice one other time, and it didn’t come out too great since I was too impatient to wait for the rice to cool down.  This time I used left over rice from a recent sub par Thai take-out experience.   I also used some veggies I had in my fridge, you can use whatever you’d like but its easy if they are small or cut into small pieces.  You can also add egg, If you use egg, cook the egg first and then set aside until the end, so that whatever sticks to the pan will be incorporated into the rice eventually.

Here’s what I used:

  • 1 Tbsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp curry powder
  • 1 cup of rice (cooled down but a day or so old is better)
  • 1/2 small zucchini cut into pieces
  • 6 portabella caps cut into pieces
  • 1/4 red bell pepper cut into pieces
  • A couple slices of red onion cut into pieces
  • 1 clove garlic, minced
  • 2 slices of fresh ginger, minced
  • olive oil
  • sesame oil
  1. Combine first 3 ingredients and set aside
  2. Heat olive oil in a pan and add curry seasoning, let sit for a minute
  3. Add veggies and sprinkle with about 1 tsp of sesame oil
  4. Stir and let saute about 3 minutes
  5. Add garlic and ginger, stir and let saute for a minute
  6. Add rice and sauce mixture
  7. Mix together and distribute evenly in pan, let sit for a few minutes without stirring
  8. Mix once and then let sit for a minute or two more without stirring
  9. After a few minutes remove from heat.  You got yourself some fried rice!

Don’t forget the Sriracha!

  1. hehehe i’ve tried to make fried rice at home too and the hardest part for me is not stirring it while its sitting. i also didnt know that you are supposed to wait until the rice cools down.. hmm.. more waiting… !!
