Hodge Podge Breakfast

The other day I had a bunch of stuff that I needed to use up in the fridge and I also wanted to make my favorite breakfast treat: home fries.  So I made a mango and avocado salsa with home fries.

For home fries

  1. Potatoes
  2. 2 cloves garlic, minced
  3. 1/2 onion, diced
  4. salt and pepper
  5. red pepper flakes
  • Cut potatoes into pieces
  • Boil for 3-4 minutes
  • Drain and let cool
  • Then make salsa while potatoes cool

For Salsa

  1. 1 Mango, diced
  2. 1 avocado, diced
  3.  I used what I had left of a yellow onion and a red onion, diced
  4. cherry tomatoes, cut in half
  5. olive oil, salt and pepper

Mix all the ingredients together in a bowl and season with salt and pepper to taste.

Back to the potatoes

  • Heat some olive oil in a pan and add onion, cook for a few minutes
  • Then add potatoes and garlic
  • sprinkle with pepper, salt and red pepper and mix
  • Try not to move them too much so the side can brown
  • Then flip them over
  • Cook them until they are as browned as you would likeThis ends up being a pretty healthy breakfast, starch and all.  This mango (and many others) were a gift form a customer who comes to the bar.  Shout out to Rob and his mango tree!
